Turon malagkit has been so popular nowadays. With the pandemic going on, people are looking for some ways to reinvent their ingredients and experiment with new recipes. One of the outcome of those experiments is the turon malagkit. Basically, the sticky rice (malagkit rice) is cooked just like regular rice. Then, it is wrapped with lumpia wrapper or spring roll wrappers. After wrapping, the sticky rice will be deep-fried and coated with caramelized sugar.

How to Cook Ube Turon Malagkit

Since turon malagkit has been so trending so as ube-flavored foods, I thought of making my own version of ube-flavored turon malagkit. Ube or purple yam is a very delicious root crop and used to make delicacies like ube halaya. Over the years, people have come up with different recipes with purple yam flavor. In this recipe, to make it taste like ube or purple yam, I use ube-flavored condensed milk. I also added some cheese as filling to balance the sweetness.

There are two ways to cook ube turon malagkit. First, you can use ube-flavored condensed milk. Second is by using ube flavoring. Also, you can either dip the fried turon malagkit in caramelized sugar or sprinkle the sugar to the turon malagkit while frying so it will caramelize as you fry.

Ube Turon Malagkit

Ube Turon Malagkit

Ube-flavored stick rice goodness wrapped in crunchy and sweet spring roll wrapper. It’s a delight in every bite!

Ingredients

1/2 kilo malagkit (around 2 cups)

1 can ube-flavored condensed milk (390g)

1 (140ml) evaporated milk

2 tablespoon margarine

2 1/2 cups water

Lumpia wrapper (50 pieces small)

10 tablespoon sugar (for coating)

oil for frying

Cheese (cut into strips, for filling)

  • Wash the glutinous rice and rinse well. Put in a pot then, add evaporated milk and water. Cover and cook in medium low heat. (just like cooking regular rice).
  • When cooked, transfer the glutinous rice in a large pan. Add the ube condensed milk and margarine. Cook in low heat while stirring occasionally until the mixture becomes sticky and hard to stir. Once cooked, set aside and let it cool completely.
  • After cooking the cooked sticky rice, time to wrap. Put around 1 tablespoon of sticky rice mixture in one end of the lumpia wrapper. Spread and form into a log. Add filling, I put cheese strip. Roll and wrap the mixture. Seal the ends with water. Do the same thing rest of the mixture.
  • Heat some oil in a pan for deep-frying. Then, fry the wrapped sticky rice until golden brown. Sprinkle some sugar and wait until it caramelizes and coat the fried stick rice.
  • After frying, put in a wire rack to drip excess oil and to keep the wrapper crunchy. Enjoy!

RECIPE NOTES

  • Ang mga prices ng ingredients ay pwedeng magkaiba iba depende kung gaano karami ang binili, sa brand ng item at kung saan binili. Ang mga prices na nakaindicate sa taas ay ang actual na presyo ng mga ingredients na ginamit ko sa recipe na ito.
  • Dine sa amin, may nagbebenta nito na nasa microwave tub and pinepresyuhan ng per container (let’s say 6pcs. 40 to 50 pesos). Pwede rin naman tingi, pwedeng presyuhan hanggang 7 to 8 pesos. Nasa inyo na po kung paano nio pepresyuhan or ipapackage.
  • Maaari din gumamit ng ube flavoring sa recipe na ito. For this recipe, use around 1 to 2 tablespoon of ube flavoring then add some sugar to the glutinous rice while cooking.

Turon is commonly known for its use of banana wrapped in rice wrapper and fried. Turon Malagkit takes it to another level. Using available ingredients which could include sticky rice and mango, or cheese and rice and fried. The Filipino-style spring rolls are filling, delicious, and perfect as snack or dessert.

What is Ube

Ube halaya or halayang ube (variant spellings halea , haleya ; from the Spanish jalea , “jam”) is a Filipino dessert made from boiled and mashed purple yam ( Dioscorea alata , locally known as ube ).

Ube halaya is the main base in ube/purple yam flavored-pastries and ice cream. It can also be incorporated in other desserts such as halo-halo . It is also commonly anglicized as ube jam, or called by its original native name, nilupak na ube .

The main ingredient is peeled and boiled purple yam which is grated and mashed. The mashed yam, with condensed milk (originally sweetened coconut milk), are added to a saucepan where butter or margarine had been melted. The mixture is stirred until thickened. Once thickened, the mixture is cooled down and placed on a platter or into containers of various shapes.

Ube halaya is typically served cold, after refrigeration. Optional topping includes browned grated coconut, latik, or condensed milk

The Turon Malagkit Basics

½ kilo glutinous rice or malagkit  3 cups coconut milk (or 400ml coconut cream/Nestle tin cream)  Turon wrappers (spring roll wrap) 1/2 kilo brown sugar  Oil for frying (olive/coconut)

1. Put it all together

In a pot, cook the malagkit (rice) with the coconut milk. Stir it occasionally to prevent sticking at the bottom. Once cooked, transfer it in a bowl and let it cool.

Scoop a spoonful of the cooked malagkit and dip/coat it in brown sugar.

Then start shaping and wrapping it with the turon wrapper. If preferred, add ripe langka (jackfruit) strips or ube (yam or peanut butter) for additional flavors or variety.

Keep wrapping until all ingredients are used up.

2. The Fry Pan

In a frying pan over low-medium heat, pour a cup of oil. Make sure that the oil is hot before putting 2-3 tablespoon of brown sugar (at a time). 

When the sugar starts to float, add the wrapped pieces and start frying, stir to coat your turon with melted sugar caramel. But don’t overcook. Just add more sugar as you cook more turon.

Finally, drain the turon to remove excess oil.

Place on plate ready to eat and enjoy.

Stand back… Serve it hot or cold. The kids will love it if they can get past me! Enjoy your turon malagkit.

With ube turon, you basically have an ube filling added inside. A regular turon generally involves a sweet crisp spring roll wrap drizzled with melted sugar and stuffed with roasted bananas. The sweet treat, however, can come with different fillings. Ube just happens to be one of the more popular flavors among snacks and desserts. Making this dish is a relatively simple process, and there are different ways you can go about adding ube flavoring to turon. This recipe is just one way to make this snack:

  • 5 pieces lumpia wrapper
  • 3 tablespoons ube halaya jam
  • 3 bananas (saba variety), sliced lengthwise (optional)

Instructions  

  • Apply the lumpia wrapper/spring roll wrapper onto a clean surface and spread 1/2 tablespoon ube halaya jam
  • Place the sliced saba bananas on the bottom third of the lumpia wrapper.
  • Fold each side to enclose the filling then roll and seal the end by applying water.

I make ube halaya all the time, not only because we’re big fans of ube at home but also because I love baking with ube jam (can you tell? LOL).

Ube turon is the latest in a long list of ube desserts I make. And as always, it’s so darn good.

  • Easy to make . Unlike other ube turon recipes, mine doesn’t contain malagkit or glutinous rice. I decided to make it simpler and easier to make. Just jam and cheese, that’s it! 
  • Easy to customize . But it’s incredibly easy to customize. You can add other ingredients that go well with ube, or that you’d like in your turon, like macapuno, langka and even saba or plantain!
  • Portable . These are great to bring to picnics and potlucks, perfect for lunch boxes, and for eating on the go.
  • Delicious . Ube and cheese in a crispy spring roll wrapper. You won’t be able to eat just one.

How to make

Making ube halaya turon is similar to how you make turon (turon in English is banana spring rolls) and apple spring rolls — roll ingredients in a spring roll wrapper and fry.

Ingredients and cooking tools

You will need just 5 ingredients in this recipe:

  • Ube halaya or ube jam — I always use homemade ube jam in my ube recipes. You can also use your favorite ready-made jam, the important thing is you use ube that you enjoy eating on its own.
  • Cheese — I like using strong cheddar cheese because it goes so well with ube. However, you can use whatever cheese you have on hand.
  • Spring roll wrapper (or lumpia wrapper) — you can find spring roll wrapper in the freezer section of your supermarket. It’s also available in Asian supermarkets.
  • Cornstarch — mixed with a little water, this is what we use to seal the turon.
  • Oil — for frying. We use canola oil but you can use whatever you use at home.

As far as cooking tools go, nothing special needed, just a pan for frying.

Position a spring roll wrapper on your workspace (I like using a large cutting board) so that it looks like a diamond when you look down on it.

Place ube jam and slices of cheddar cheese.

Then fold the sides.

Turon ube cheese ready for frying.

Then seal the top by dabbing some cornstarch mixed with water.

Fry on medium-high heat until golden brown. You really only need about a minute on each side.

Remove from pan and allow the excess oil to drain before serving.

Expert cooking tips

Easy, right? Here are more tips for perfect ube cheese turon every time.

  • Don’t overfill . I only place about 2 heaping tablespoons of ube jam and 2 small slices of cheese as filling. If you overfill the turon, the filling might ooze out during cooking.
  • Wrap snugly but not too tightly. Wrapping too tightly will also cause the filling to ooze out.
  • Don’t overcook. Remember that the filling is already cooked. Once the wrapper turns a nice golden brown, take it out.
  • Don’t overcrowd . For best results, don’t overcrowd your pan when frying.
  • Allow the oil to drip before serving . I like to place the freshly cooked rolls on a wire rack. Placing them on a plate on top of one another tends to make them soft and soggy.

If you’ve ever had ube pies , this tastes very close to that, except we don’t use pastry and it’s fried. It’s sweet from the ube jam, salty from the cheese, and crispy from frying. It’s delicious!

This recipe uses ube jam .  If you have fresh ube or purple yam, frozen ube or powdered ube, you can’t use them as is. You’ll need to make ube jam first.

Yes, you can.  The temperature and cooking time largely depends on the kind of air fryer you have but you should be good following directions on how to cook generic spring rolls.

Like banana turon , ube turon freezes very well.  You can make a batch, roll them, and place them in a freezer-safe container. Ensure that your container is air-tight so that they don’t get freezer-burn.  You can fry them straight from the freezer, no need to thaw

Ube turon is best eaten the day it’s made because they lose their crispiness the longer they sit. To store leftovers, place in a covered container in the fridge. Heat in the microwave before serving and, optionally, pop in the oven toaster to add back a little of that crunch.

Ingredients   US Customary Metric   1x 2x 3x

  • ▢ 1 package spring roll wrapper (8×8 inch) thawed according to package instructions
  • ▢ 23 oz ube jam or ube halaya
  • ▢ 7 oz cheddar cheese sliced
  • ▢ ¼ tsp cornstarch mixed with a little water
  • ▢ oil for frying

Instructions

  • ▢ Fry on medium-high heat until golden brown. You really only need about a minute on each side. oil
  • ▢ Remove from pan and allow the excess oil to drain before serving.
  • The total yield depends on how much filling you put in your turon. The estimated nutrition information is based on 20 turon.
  • Careful not to overfill your turon. I only place about 2 heaping tablespoons of ube jam and 2 small slices of cheese. If you overfill the turon, the filling might ooze out during cooking.
  • Also avoid overcooking. Remember that the filling is already cooked. Once the wrapper turns a nice golden brown, take it out.
  • For best results, don’t overcrowd your pan when frying.

Kamote Turon (Sweet Potato Spring Rolls)

These crunchy, sweet,  and delicious Kamote Turon will wow your Filipino family! It's simple to make, vegan, and addicting!

What is Turon?

Turon, for those who do not know what they are, is a type of banana wrapped in a spring roll pastry that is then deep-fried.

It is popular street food in the Philippines that is more or less the same wherever you go ...except for these. It's prepared with, sweet potato, ube powder, and pineapple juice- it's amazing!

What is Kamote?

In English, it's sweet potato which grows abundantly in the Philippines even if you don't mean to grow it. It is also spelled Camote.

Tips & Variations:

  • Do not overcook the turon because if you overcook it, it will become a little bitter .
  • Freezing: You can freeze the kamote turon for up to 6 months in a freezer-safe container, before it's fried. Just make sure that you thaw them to room temperature before deep-frying

How to Make Kamote Turon:

Listed below are all the ingredients you will need:

  • sweet potatoes
  • lumpia wrapper
  • coconut oil
  • brown sugar
  • pineapple juice

Wash the sweet potatoes.  Then in a pot over medium-high heat, bring to boil 2 cups of water, add potatoes, and boil for 30-35 or until potatoes are tender.

Drain the water and place the potatoes in a bowl, and mash the potatoes with a fork or a potato masher, then divide the potatoes into two separate bowls.

  • In one of the bowls, add ube powder and mix until well combined and set aside.

  • Layout the lumpia wrapper and if using a square wrapper, lay it out with the corner pointed towards you.
  • Then add two tablespoons of kamote ube in the lower middle section of the wrapper.

  • Fold left and right corners toward the center and continue to roll, then seal with water. Repeat until all the kamote ube filling and the plain filling is gone.

Fill a large frying pan with oil and heat the oil over medium-high heat. Gently place the turon into the hot oil and fry until golden brown on all sides, about 3 to 5 minutes , then place the fried lumpia on paper towels to remove the excess oil.

In another pan over medium-low heat, add 2 tablespoons vegan butter and allow it to melt. Then add salt, brown sugar and cook until it’s caramelized.  Add pineapple juice mixing it by moving the spoon in one direction/motion. (note: Don’t mix in circles)

Once the syrup has been incorporated, (You will know if it is ready if the thread drops slowly), add the fried turons and mix carefully until the sauce has covered the turon (the pan should be clean).

  • Place fried turon on a platter and allow it to cool completely, then serve.

  • ▢ ¼ cup brown sugar
  • ▢ 2 tablespoons pineapple juice

Instructions
