Earlybird now has roots, opening a brick-and-mortar in Schnitzelburg. They just opened, and I excitedly tried them out. Looks like others thought the same thing too. They were very busy when I stopped by. I ordered the LEO without onion for me and the Lox & Works for my husband. I loved my sandwich which had lox, shmear and egg. The bagel was my favorite, definitely fresh and chewy. The Lox & Works was large and in charge, a bagel sandwich that will fill you up. While I waited I watched as they made their bagels on site. I also love and appreciate the list of local businesses they partner with that's up for all to see. And Earlybird makes and sells bialys! I will definitely try these on a return trip. Earlybird is open until 3 or whenever they sell out, which they did today, so go early!

The schmears are actually REALLY good. But, wow the price. I don't understand why the bialy with cream cheese is $0 additional but as soon as I ask for it on the side it's $2.50. I'm not looking for anymore than what would normally go on there at $0 charge. It's so crazy to be paying $2.50 for each schmear or cream cheese/spread. I asked the person ringing this up but she was confused and really couldn't explain why. I was really hoping that I could frequent this place more often because I live within walking distance but the prices have totally priced me out.

Earlybird Bagel Shop is serving up some absolutely delicious artisan bagels! They're rolling each small batch by hand, and of course they're pairing them with decadent handmade schmears. I love bagels, and while I think we have a few good options around town, Earlybird Bagel Shop is definitely top of my list. Hands down, these are now my favorite bagels in Louisville. Trust me, they're everything you want in a bagel - a glossy crust, with a tender chewy center, complimented by absolutely delicious additions like schmear or egg and cheese (or, for me, both)! Currently they're offering online orders and pop-ups, but they have plans to open a brick and mortar shop soon, and I for one can't wait! If you love bagels, be sure to check them out!

If you are looking for a cute bagel shop, here it is! They have all types of bagels. Different flavors and sizes! I got the cacio Pepe bagel with egg and bacon and a coffee. A great breakfast to fill me up!

I have been patiently waiting for this place to open and it did not disappoint. The space is bright and the staff was friendly. It's a pretty straightforward set up. They have bagels and bagel sandwiches. Decided on the egg and cheese (pepper jack was my choice) and added sausage, on an everything bagel. I am looking forward to trying more. The Zatar will be next I think. I do hope that they put labels on the customer facing side of their display case though, so we can know which is which.

As of this writing, Earlybird is just doing pop-ups, but I'm keeping my ears perked until they open that storefront in Schnitzelburg, plain and simple, because the bagels I've had so far are excellent. It of course makes a difference that they serve them fresh, but they've also demonstrated that they can get the right rise and chew, with a really good crumb. I keep intending to try one plain - with or without a schmear - but they keep doing things like at the last pop-up, where they offer Good Belly pastrami on a marble rye bagel, which is too hard to pass up. (I'd happily eat Good Belly pastrami on a slab of cardboard.) And it doesn't hurt that they still show interest in offering a well-rounded menu at their pop-ups. All that said, you should be here for the bagel. Skip the in-house toaster. But don't sleep on the bialys, which are every bit as good.

My hope is that what I experienced were first-week kinks that will be eventually ironed out. The bagels were adequate, however they are not big, especially considering the price. I went their third day open and waited an hour for three untoasted bagels, two with cream cheese. There was absolutely no sense of urgency in the staff, who casually walked around and made orders. There was no acknowledgement of the absurdly long wait, as if this was normal for such businesses. It seems they have very little experience in the restaurant industry based on the slow pace and lack of expediting simple orders, opting instead to do them exactly as they come through. Having worked in the industry for years cooking and running kitchens, I appreciate the need to workout early kinks, though also know you mediate the effects of those through exceptional customer service. The latter was not present. I am hoping these issues are quickly corrected, though just saw they are closed on a Saturday due to insufficient staffing. I will consider returning in a few months, as I would love a good bagel shop in my neighborhood. Side notes: The 80's rock blasting was brutal for early morning and I wish it would have been something more consistent with a cafe. Calling the cream cheese a "schmear" needs to go. This isn't New York and they're not from New York. I get the trying to be cute, but they've got more important things to focus on than being cute. Just call it cream cheese.

Dobrowolski says the reaction to the wedding-inspired cocktail has been overwhelmingly positive. “Most feedback includes how pretty and elegant it looks as well as how tasty and refreshing it is, too,” said Dobrowolski, and with wedding season just around the corner, the demand is just expected to grow. “We expect it to be a signature drink for many and plan to showcase it at our Milford Wedding Crawl Festival in July,” said Dobrowolski.

Well, one thing is certain: It’s a lot easier (and less messy) to dance at a wedding with a martini in hand, rather than a slice of cake.
